    Mixed Vegetable Saute

Directions:
In a nonstick skillet over medium heat , warm the oil.
Saute the onion until softened.
Add the garlic and herbs or spices and cook 1 minute.
Stir in first the vegetables that take longest to cook such as eggplant , peppers , carrots, and turnips.
Then add the broth or sauce and cook on medium-high heat 3 to 5 minutes before adding quicker-cooking vegetables likew squash , sweet potatoes ,and leeks.
Simmer another few minutews until everything is tender and the liquid is reduced and thickened .
Garnish with parsley or basil.
Ingredients:
2 to 3 tablespoons vegetable or olive oil
? onion , chopped or sliced
2 garlic cloves, minced, or 1 teaspoon garlic paste
1 to 3 tablespoons herb or spice blend
6 cups assorted coarsely cut , cubed, or sliced vegetables
? to ? cup canned broth or sauce
Chopped fresh parsley or basil, for garnish
